One 12" Boboli pizza crust, any styleYou can add other ingredients to this barbecue chicken pizza recipe to liven it up. Black olives, mushrooms, green peppers, or my favorite, crispy bacon all make good additions to this pizza.
One half cup pizza sauce, or spagetti sauce (I like chunky vegetable pizza sauce)
One and one-half cups chopped barbecue chicken
Two tablespoons barbecue sauce
One-half cup coarsely chopped onions
Eight ounces of smoky provolone cheese, shredded
One ounce of grated Parmesan cheese
Spread the pizza/spagetti sauce on the crust. Mix the chicken and barbecue sauce together, and spread evenly onto the pizza. Finish by topping with the onions, provolone and the Parmesan cheeses.
Set up your gas or charcoal grill for indirect grilling. Aim for a medium high grill temperature of 350-425 degrees Fahrenheit. Place the chicken pizza on the cool side of your grill and cover 'er up! Rotate the pizza one quarter of a turn, every two or three minutes...just often enough to keep the crust from burning on the hot side. Grill the barbecued chicken pizza for ten to fifteen minutes, or until the cheese is melted and the crust is crispy.
