Barbecue Chicken Recipes

For great tasting, healthy eating these barbecue chicken recipes offer plenty of choices. You can have your chicken with or without bbq sauce, skin-on or skinless, or grill smoked. Then you can use the leftovers to create other dishes that nobody knows is made of secondhand chicken!

Chicken is also an economical way to eat, especially when buying whole birds. Barbecued chicken, cooked with low, indirect heat is great tasting with or without sauce. And if you're in a hurry, chicken breasts or other parts can be quickly grilled over direct heat.

Barbecuing Chicken Outdoors

Grilled whole chicken is a favorite. It can be barbecued laying right on the grate, skewered on a rotisserie, or standing upright on a beer can (my favorite). The secret to great tasting whole chicken is brining first, then seasoning with a dry rub before hitting the barbecue grill. A few fresh herbs stuffed inside can really make a difference, too.

Chicken thighs, breasts, wings and drumsticks also benefit greatly from brining and seasoning. A good chicken marinade does wonders for the flavor, too. If you're in a hurry, chicken breasts can be cooked in a short time on the grill.

It's important, though, not to overcook chicken breasts. The white meat can quickly become dry and tough if overcooked just a little. An instant read meat thermometer is a "gotta have" tool if you want to consistently barbecue perfect chicken breasts.
