Chicken is an economical way to eat, especially when buying whole birds. Barbecued chicken, cooked with low, indirect heat is great tasting with or without sauce. And if you're in a hurry, chicken breasts or other parts can be quickly grilled over direct heat.

Barbecuing Chicken Outdoors

Grilled whole chicken is a favorite. It can be barbecued laying right on the grate, skewered on a rotisserie, or standing upright on a beer can (my favorite). The secret to great tasting whole chicken is brining first, then seasoning with a dry rub before hitting the barbecue grill. A few fresh herbs stuffed inside can really make a difference, too.

Chicken thighs, breasts, wings and drumsticks also benefit from brining and seasoning. A good chicken marinade does wonders for the flavor, too. If you're in a hurry, chicken breasts can be cooked in a short time on the grill.

It's important, though, not to overcook chicken breasts. The white meat can quickly become dry and tough if overcooked just a little. An instant read meat thermometer is a "gotta have" tool if you want to consistently barbecue perfect chicken breasts.
