BBQ Fish Skewers

What can I say but CODSICKLES! These bbq fish skewers are marinated in a sweet, salty brine that cures the fish and adds loads of great flavor.

Each skewer impales a few nuggets of lean protein that are kind of sweet, kind of salty, and flavored with ginger and soy. The inspiration for this recipe is a smoked salmon recipe I've used several times in the past.


Marinated Fish Skewers - CodSickles

Recipe for 2 pound of cod fillet, cut to 1 inch cubes.

INGREDIENTS


Place the cubed cod into a plastic food storage container. Combine the remaining ingredients in a mixing bowl and, well...mix 'em together. Pour the marinade over the cod, making sure each piece is completely covered.

Marinate the fish in the fridge at least overnight, and up to two days. Thread the marinated cod cubes on water soaked bamboo skewers, leaving a gap between each piece.

Grill your bbq fish skewers with medium indirect heat for 10 to 12 minutes. Use some smoke wood while grilling for even more flavor. Fish skewers also cook great in the smoker.

Enjoy hot off the grill or smoker with a few bottles of cool Pilsener Urquell.
