Lemon Tarragon Marinade
Great for marinating chicken,
lemon tarragon marinade is also good for fish. French tarragon is considered the best to use as a kitchen herb.
To get the most flavor from the fresh tarragon used in this recipe, lightly crush it before chopping.
Fresh Tarragon and Lemon Marinade
Use this recipe to marinate 2 pounds of boneless chicken breasts or fish fillets before grilling.
INGREDIENTS

1/4 cup fresh squeezed lemon juice

1/4 cup dry white wine

1/4 cup extra virgin olive oil

2 tablespoons fresh tarragon, bruised and chopped

1 teaspoon lemon zest

1 teaspoon salt

1/2 teaspoon black pepper
Combine the lemon juice, wine, tarragon, salt, pepper and lemon zest. Whisk in the olive oil. Marinate chicken breasts for 2 to 4 hours, fish fillets for 1 hour per inch of thickness.
