Catfish Marinade
This recipe makes enough marinade for 3 pounds of fillets. Light your gas grill, set for medium high heat, and come back to this recipe.
INGREDIENTS

1/2 cup white vinegar

1 tablespoon lemon pepper seasoning

1 teaspoon celery salt

1 teaspoon white pepper

1/4 cup vegetable oil
Combine all but the oil. Gradually whisk in the oil until the mixure is emuslified.
Pour this marinade over the catfish, laying single layer in a baking dish. Marinate at room temperature for 5 minutes, then turn the fillets over and marinate for another 5 minutes. Take them out to the grill.
Remove the marinating catfish from the dish and place onto your grill, over direct heat. Cook for 3 minutes on the first side, flip over, and grill for another 3 to 5 minutes, until the flesh flakes easily. Serve your grilled catfish immediately, with a wedge of lemon.
