Memphis Rib Rub

Memphis is known for great ribs. This Memphis rib rub recipe will have you making some of the best ribs around.

If you're not familiar with Memphis style ribs, you need to understand that they are usually eaten without sauce. That means that the flavor comes from the dry rub that seasons them and the hickory smoke that kisses them as they cook.

Here's what you'll need...
One quarter cup brown sugar
Three tablespoons paprika
Two tablespoons black pepper
One tablespoon celery salt
One tablespoon onion powder
Two teaspoons garlic powder
Two teaspoons mustard powder
One teaspoon ground cumin
One teaspoon ground cayenne


Mix the seasonings together well. This recipe will make enough Memphis dry rub for two trimmed sparerib slabs. Smoke the ribs with hickory at 225F until the meat is just tender enough to pull away from the bone.
