Smoked Turkey Soup

Got leftover smoked turkey? You can use some in this tasty smoked turkey soup recipe. And you may like it so much you'll end up making turkey soup out of all the leftovers!


This is a real easy recipe, too. Saute a few veggies, add 'em to chicken broth, and toss in the smoked turkey.


Smoked Turkey Vegetable Soup

You can use fresh veggies, but for ease, I use frozen. They're almost as good, if not sometimes better than fresh vegetables.

INGREDIENTS

Heat a skillet over medium heat. Add the onions and saute until translucent. Add the frozen vegetables, salt and pepper. Cover skillet and heat the veggies until thawed, stirring to prevent burning. Remove the lid and continue cooking until the veggies just begin to brown a bit around the edges. This is what gives the soup a deep rich flavor.

Pour the chicken stock into a large stock pot. Add the turkey and the veggies, season with the poultry seasoning, and bring to a simmer over medium heat. Remove the smoked turkey soup from the stovetop and serve immediately.
