Go ahead. Try it! This barbecue chicken pizza recipe makes darned good pizza. It's easy to put together and cooks quickly. This is grilled pizza perfection!
The hardest part of this recipe is barbecuing the chicken, and that's even pretty easy. Use one of my barbecued chicken recipes, or go to the deli and grab some there. I like to use thigh meat on my pizzas, but chicken breast makes a good pizza too. Remove the skin (if you want to) and chop the chicken into small pieces. You don't want great big chunks of bbq chicken on the pizza...might make it hard to eat.
Here's what you'll need to make one bbq chicken pizza.
One 12" Boboli pizza crust, any style
One half cup pizza sauce, or spagetti sauce (I like chunky vegetable pizza sauce)
One and one-half cups chopped barbecue chicken
Two tablespoons barbecue sauce
One-half cup coarsely chopped onions
Eight ounces of smoky provolone cheese, shredded
One ounce of grated Parmesan cheese
Spread the pizza (or spaghetti) sauce on the crust. Mix the chicken and barbecue sauce together, and spread evenly onto the pizza. Finish by topping with the onions, provolone and the Parmesan cheeses.
Set up your gas or charcoal grill for indirect grilling. Aim for a medium high grill temperature of 350-425 degrees Fahrenheit. Place the chicken pizza on the cool side of your grill and cover 'er up! Rotate the pizza one quarter of a turn, every two or three minutes...just often enough to keep the crust from burning on the hot side. Grill the barbecued chicken pizza for ten to fifteen minutes, or until the cheese is melted and the crust is crispy.
You can add other ingredients to this pizza recipe to liven it up. Black olives, mushrooms, green peppers, or my favorite, crispy bacon all make good additions that'll add nice flavor.
