I found a package of lamb chops on special the other day. Made bbq lamb chops out of 'em. And they were good!
After bringing my cheap chops home, I took stock of my herbs, spices and seasonings. This is what I came up with, a wet rub recipe for lamb.
This recipe made just enough rub for 3 pounds of lamb chops.
Combine the dry ingredients with the olive oil. Massage the wet rub onto the lamb chops, both sides.
Lay the chops on a platter, in a baking dish or a bowl and let them rest for two hours, absorbing the herbal aromatics. Remove, drain, and grill over medium high direct heat, 2 to 4 minutes on each side, depending on thickness and desired doneness. Best when grilled to medium rare or medium doneness.
Let the chops rest for 5-10 minutes before serving.
