Brisket Sandwich

You have your typical brisket sandwich made with slices of barbecued or smoked brisket, doused with brisket sauce and piled high between slices of bread. But this sandwich is different, and very, very tasty!

I don't know if it was a stroke of genius, or just a good idea from which this sandwich was born. All I know is they are great tasting, even if they aren't the most heart healthy thing to eat. Oh well, you only live once!

INGREDIENTS

I prefer to use leftover smoked brisket for these sandwiches, because the marriage of smoky flavor and cheese is a match made in Heaven!

  • Two pounds shredded, smoked brisket or barbecue brisket
  • One pound American cheese or Velveeta (cut into one inch chunks)
  • Eight hoagie buns

There are a couple of ways to heat up the brisket and cheese.

One is to put the shredded brisket in a large sauce pan, then drop the cheese right on top. Slowly heat up the contents over a low burner on the stove top. Once the meat is hot, the cheese will be nice and soft. Remove the pan from the burner and stir the cheese into the shredded meat.

Or, you an put the brisket and cheese into a large, microwave safe bowl and do it the quick way. Heat on high for 30 seconds, then give it a quick stir. Give it another 30 seconds and stir again. Now microwave the mixture in 15 second bursts, stirring a little each time until the cheese is completely melted and mixture is good and hot.

Now all that's left is to add a healthy scoop of the cheesy brisket filling into the hoagie buns and serve a hot 'n tasty brisket sandwich to each and every hungry drooling mouth!
