Grilled Chicken Pasta Makes Use of Leftover Chicken

Great for leftovers, this grilled chicken pasta recipe comes in handy when you have a chicken breast of two in the fridge from last night's barbecue. The healthy white meat chicken combined with fresh herbs and garlic are tossed into pasta with a little olive oil and parmesan cheese.

And don't skimp on the pasta. This is no place for using bargain aisle noodles. Buy some good quality brand name dried pasta or refrigerated pasta. Better yet, learn the art of pasta making and create your own!

Grilled Chicken and Pasta Recipe


  • 2 grilled chicken breasts, boned and coarsly chopped
  • 1 pound dried pasta, cooked and drained
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon finely chopped garlic
  • 1//4 to 1/3 cup of good quality extra virgin olive oil
  • 1 tablespoon grated Parmesan cheese, with extra for topping
  • Salt and pepper to taste

Combine all ingredients, mixing gently until thoroughly combined. Top each serving of grilled chicken pasta with a bit more grated Parmesan cheese, a fresh basil leaf and a wedge of tomato.

For a twist, substitute one cup of Alfredo sauce in place of the olive oil. It's perfectly fine to use a good bottled Alfredo sauce, usually found alongside spaghetti sauce in your grocery store.
